Fermentation of tea is carried out artificially - by increasing the humidity, controlling the activity of the desired microorganisms. During fermentation, the production of organic acids occurs, and as a result, the PH of the raw materials decreases. Shu's reaction becomes alkaline, and this gives him a slight advantage over Shen - you can drink tea even in the morning on an empty stomach.

Shen: brewing features
Many cannot enjoy the effect of Shen Pu-erh tea because they brew like the tea of Shu. But there are some nuances. So, water of 98 degrees is completely unsuitable for this type of tea. Here they take cooler water: 80-85 degrees - for young Shenov, 85-90 for matured.
