• Salad: celery, carrots and apple

    Fresh vegetable and fruit salads - a great appetizer, stimulating the appetite. One of the most successful combinations is sweet-sour apples and spicy celery. Add to this duet fresh carrots - the salad will become even more useful and satisfying.

    Salad with celery, apple and homemade mayonnaise

    This simple salad will acquire additional spice due to the tender homemade mayonnaise. Serve as a snack, accompanied by fresh white bread or toast.

    You will need: - 200 g of celery root; - 1 large apple; - 1 carrot; - 1 tablespoon of lemon juice; - a few sprigs of green celery.

    For mayonnaise: - 1 yolk; - 80 ml of olive oil; - 0.5 teaspoon of mustard; - 1 tablespoon of lemon juice; - salt; - ground black pepper.

    Wash carrots and celery, peel and grate on a coarse grater. Remove the skin from the apple, remove the seeds, cut the flesh into very thin straws and sprinkle with lemon juice.

    Make homemade mayonnaise. In a slightly heated bowl, release the yolk, add the mustard and whisk. In a thin stream pour in olive oil, without stopping the beating. Gradually, the mass will begin to thicken and brighten. Pour in lemon juice, salt and pepper mayonnaise to taste.

    Put grated carrots and celery in a salad bowl, place the apples on top and pour all the mayonnaise. Salad can be served in portions - for example, in transparent ice-cream bowls or glasses. Decorate each serving with green celery.

    This tender sweetish salad is ideal for a light snack. It is low-calorie, but quite nutritious and contains many beneficial trace elements, vitamins and fiber. Serve chilled with freshly squeezed orange or tangerine juice.

    Salad with celery, carrots and nuts You will need: - 2 celery stalks; - 2 large carrots; - 2 apples; - 0.5 cups peeled walnuts; - 1 tablespoon of lemon juice.

    For the sauce: - 150 g of natural yogurt; - 2 tablespoons of cream; - 1 tablespoon of grated ginger root. - 2 tablespoons of honey.

    Apples and carrots clean and grate on a coarse grater and sprinkle with lemon juice.Celery stalks free from hard fibers and cut into small cubes. Walnut kernels fry in a dry skillet and coarsely chop.

    Instead of walnuts, you can use toasted sunflower seeds or pine nuts

    Dish lay salad leaves and put on them cubes of celery, grated carrots and apples.
